Wed June 8th Freezer Cooking

Put chicken in oven at 375* for 45 min
Mix a batch of croutons and bake with chicken
Mix Scrambled Eggs
Cut bread for French Toast Sticks and dip in eggs
Cook French Toast Sticks
Make rest of scrambled eggs
Toast English Muffins and Meat for sandwiches
Take chicken out of oven and cool (I strip bone and flash freeze)
Assemble sandwiches and place in freezer bags
Finish shredding chicken

Used chicken in a big batch of stir-fry for supper and portioned the rest for freezer meals.

Total of 1 hour 20 min for  breakfast and  supper meals

Allspice Crumb Muffins Recipe

  • Cooking Time: 20

  • Servings: 12

  • Preparation Time: 15


  • Egg Muffin Sandwiches

    1 dozen eggs
    1/3 cup milk
    12 english muffins
    1/2 pound of bacon
    12 slices of cheese

    Scramble eggs and milk in a medium bowl. Cook eggs and set aside. Lightly toast english muffins and bacon on a griddle. Add a slice of cheese to the warm english muffins. Scoop on some eggs and add 2 pieces of bacon. Top with the muffin top and wrap in paper towel. Flash freeze on a cookie sheet or cooling rack for 30 min. Remove from freezer and wrap in foil over paper towel. Put in freezer bag and store in the freezer. When your ready to use, remove from freezer and take off aluminum foil. Place on a plate and microwave for 1 min 30 sec. Remove from paper towel and enjoy!

    Summer Shredded Chicken Stir-Fry

    1 pound shredded chicken
    4 Tbsp oil
    2 Tbsp butter
    1 small onion chopped
    1 garlic clove chopped
    1 large green pepper cubed
    1 cup fresh green beans

    In a frying pan melt butter and oil. Fry chicken for 5 min stiring occasionally. Add vegtables and seasoning. Cover and simmer 10 min. Cool and portion for your family. Place in freezer. When ready to use, thaw in refidgerator overnight. Simmer for 5-10 min and serve. I like to serve mine over white rice.

    Make Your Own Marinade

    1 1/2 pounds of steak                                                      
    1 Tbsp olive oil
    3 tsp vinegar
    2 cloves garlic minced
    1 Tbsp Worcestershire sauce
    Gallon freezer bag


    This marinade works great with steak and can be frozen. When the meat thaws it's ready to go as it has been marinating while it was in the bag!

    Kids Crafts

    Today we made our favorite craft which is Play Dough. I have two recipes for it depending on time and supplies. I usually try to go the stove-top route as it makes a better dough.

    No Cook Play Dough

    1 cup of flour
    1/2 cup of salt
    1/2 cup of water
    food coloring

    Mix salt, water and food coloring together in a medium bowl. Add flour and mix until all lumps are gone and uniformed shape. If it is sticky add a little more flour and water as needed.


    Stove-top Play Dough

    2 cups of flour
    2 cups of warm water
    1 cup of salt
    2 Tbsp of vegtable oil
    1 tsp of cream of tartar
    food coloring

    Mix and stir over low heat. The mix will be thick and resemble mashed potatoes. When mix clumps together and pulls off the side of the pan remove from heat. Allow to cool completely.

    So I was thinking of doing something for myself. This will be great for those cool summer nights that you don't really wanna wear a coat/sweatshirt for! This is a quick and easy project that I will be working on this week. Hope you enjoy the pattern and the quiet time alone it takes to make this.

    Hook: Size I/9 (5.5 mm) crochet hook or size needed to obtain gauge
    Notions: Yarn needle 7"-long piece of cardboard
    Gauge
    (Shell, sc) in pattern = 3"; 4 rows in pattern = 31⁄2"
    Special Stitch
    Shell: (Dtr, [ch 2, dtr] 4 times) in same st

    Shawl
    Ch 202. Row 1 (RS): Sc in second ch from hook, *ch 1, sk next 4 ch, shell in next ch, ch 1, sk next 4 ch, sc in next ch; rep from * across, turn—20 shells. Row 2: Sl st in each st to center dtr of first shell (dec made), ch 1, sc in same st, *ch 3, sk next ch-2 space, dc in next ch-2 space, ch 3, sk next 2 ch-1 spaces, dc in next ch-2 space, ch 3, skip next ch-2 space, sc in next dtr; rep from * across to center dtr of last shell, turn, leaving rem sts unworked (dec made)—57 ch-3 loops.     Finishing
    Wrap yarn around 7" piece of cardboard 164 times. Cut yarn at the bottom only, to create 14"-long strands. Using 4 strands for each fringe, knot one fringe in first sc on each end of all even-numbered rows. At the bottom tip of shawl, knot one fringe in center dtr of bottom shell.
